Snickerdoodle Muffins
As the name implies, these buttery, melt in your mouth muffins, with their
coating of sugar and cinnamon, taste a lot like Snickerdoodle cookies.
Ingredients:
6 cups flour
1 1/2 cups sugar
3 tsp. baking powder
1 1/2 tsp. baking soda
2 cups buttermilk
18 tbs. butter, melted
6 eggs
3 tsp. vanilla
Cinnamon & Sugar Mixture:
1 cup sugar
1 tbs. cinnamon
Directions:
In a large mixing bowl, combine dry ingredients.
In a small mixing bowl, combine wet ingredients.
Stir wet ingredients into dry just until moistened. (Batter will be lumpy.) Pour into greased muffin cups.
Bake at 325 degrees for 20-25 minutes.
When cooled, dip in melted butter and roll into cinnamon and sugar mixture.
