Broccoli and Rice
This cheesy side dish goes great with just about everything, and is so easy to prepare!
Ingredients:
2 stalks celery, chopped and sauteed
1 medium onion, chopped and sauteed
1 Cup uncooked rice
1 package (20 oz.) frozen broccoli, thawed
1 can cream of chicken soup
1 jar (8 oz.) Cheese Whiz, melted
Directions:
Cook rice according to pacckage directions.
Mix all ingredients together.
Bake at 350 degrees for 30 minutes, or until done.
Creamy Hashbrown Bake

The ultimate in comfort foods! This bubbly casserole is so creamy and delicious, it's destined to become a family favorite. Be sure to make enough for seconds!
Ingredients:
1 can cream of mushroom soup
1 can cheddar cheese soup
1 Cup sour cream
1 stick butter, softened
1/4 Cup chopped onion
1/2 tsp. salt
1 package (28 oz.) frozen hash browns
3/4 Cup crushed potato chips
Directions:
Combine soups, sour cream, butter, onion and salt.
Add potatoes.
Mix well and pour into a greased 13x9" baking dish.
Sprinkle potato chips on top.
Bake, uncovered, at 350 degrees for 55-60 minutes, or until bubbly.
Robin's Baked Corn
My sweet friend, Robin, brought us this cheesy corn casserole as part of a meal when we had our youngest child. It's been a family favorite ever since!
Ingredients:
2 cans cream style corn
2 cans whole kernal corn
1 stick of butter, melted
4 eggs
1 Cup corn meal
2 tsp. salt
2 Cups sour cream
2 Cups diced American cheese
2/3 Cup chopped red bell pepper
1/2 Cup chopped onion
Directions:
Mix all ingredients and pour into a greased 13x9" baking dish.
Bake at 350 degrees for 1 hour, or until center is firm, and top lightly browned.
Swiss Vegetable Casserole

Crunchy, french-fried onions combined with mixed vegetables in a rich, creamy sauce, and topped with melted Swiss cheese. Mmmmm.
Ingredients:
16 oz. bag frozen mixed vegetables - (I use the broccoli, carrots & cauliflower mix.)
1 can cream of mushroom soup
1 cup shredded Swiss cheese
1/3 cup sour cream
1/4 tsp. black pepper
4 oz. jar pimiento, drained (optional)
2.8 oz. can french fried onions
Directions:
Thaw and drain vegetables, and combine with soup, 1/2 cup cheese, sour cream, pepper, pimiento, and 1/2 can french fried onions.
Pour into a greased 1-quart baking dish.
Bake, covered, at 350 degrees for 30 minutes. Top with remaining cheese and onions. Bake, uncovered, for 5 more minutes.
Serves 6
