Beefy Noodle Casserole
A quick and easy family favorite that's also inexpensive. That's good, considering all the second (and sometimes third!) helpings!
Ingredients:
2 pounds ground hamburger
1 large onion, chopped
16 oz. package egg noodles, cooked
8 oz. carton sour cream
16 oz. can corn, drained
1 can cream of mushroom soup
1 can cream of chicken soup
1 tbs. grated parmesean cheese
1 1/2 tsp. salt
1/2 tsp. pepper
1/8 tsp. red pepper flakes
Directions:
Cook meat and onions together and drain off grease.
Add all other ingredients, mixing well. Place in a 13x9" baking dish. Bake at 350 degrees for 30 minutes.
Serves 8-12
Chicken and Dressing

A savory, classic dish that is surprisingly quick and easy to make using just a few basic shortcuts. Tastes like you cooked all day.
Ingredients:
1 - 3 lb. chicken
1 can cream of mushroom soup
1 can cream of chicken soup
1 can evaporated milk
2 packages cornbread stuffing mix
1 cup melted butter
1/2 can chicken broth
Directions:
Cook and de-bone chicken.
Combine soups, milk and broth. Heat thoroughly.
Combine stuffing mix and melted butter. Use remaining broth, as needed, for proper consistency.
Spread 1/2 of the stuffing into a greased 13x9" pan. Layer chicken over this, then pour soup mixture over all. Top with remaining stuffing.
Bake uncovered at 350 degrees for 35 minutes.
Chicken Tetrazzini
This is a creamy and rich "comfort food", made with plenty of Velveeta cheese and cream. One of my favorites, even without the chicken!
Ingredients:
16 oz. package spaghetti, cooked
2 cups chicken breast meat, cubed
1 large onion, chopped
2 cups grated Velveeta cheese
1 pint heavy whipping cream
Directions:
Saute chicken and onions in butter until chicken is cooked through and lightly browned.
Line a greased 13x9" baking dish with spaghetti. Cover with chicken, onions, and cheese. Pour cream over top.
Cover and bake at 350 degrees for 20-30 minutes.
Jambalaya

Shrimp, ham, and rice (and lots of hot sauce) combine for a tongue-tingling meal. Even if you're not into "hot", it's still delicious!
Ingredients:
2 cups cooked ham, cubed
1 tbs. garlic powder
3 tbs. butter
4 cups chicken broth
2 - 16 oz. cans diced tomatoes
1 large onion, chopped
1 large red or yellow bell pepper
1/4 cup Worcestershire sauce
Hot sauce or cayenne (to taste)
1 1/2 - 2 pounds cooked shrimp
3 cups uncooked rice
Directions:
Chop ham, bell pepper and onion.
Saute ham with the garlic powder in butter until lightly browned.
Add remaining ingredients (except shrimp and rice) and bring to a boil.
Add shrimp and rice.
Turn down heat and simmer covered for 20 minutes, or until rice is done.
Mock Shepherd's Pie

A simple, yet hearty one-dish casserole you can fix in a hurry. Add a loaf of garlic bread, for a complete "stick to your ribs" meal.
Ingredients:
1 1/2 pounds hamburger
1 medium onion, chopped
1/2 cup barbeque sauce
2 cans green beans 2 cans corn
4-6 cups leftover mashed potatoes
1 cup grated cheddar cheese
Directions:
Cook hamburger and onion together. Drain off grease, then stir in barbeque sauce.
Drain green beans and corn, and combine in a 13x9" pan. Put hamburger over the top.
Spread mashed potatoes over all and sprinkle grated cheese on top.
Bake at 350 degrees for 25-30 minutes.
Hint: Don't have leftover mashed potatoes? Substitute instant potato flakes!
