Aunt Tina's Coffeecake
My sister-in-law, Tina, made this delicious, cinnamon coffeecake for us. It's been a family favorite ever since. Perfect with a cup of coffee.
Ingredients:
1 1/2 cups sugar
1/2 cup soft shortening
2 eggs
1 cup milk
3 cups flour
4 tsp. baking powder
1 tsp. salt
Streusel Ingredients:
1 1/2 cups brown sugar
6 tbs. flour
6 tsp. cinnamon
6 tbs. butter, melted
1 1/2 cups chopped nuts (optional)
Directions:
Blend sugar, shortening and eggs together thoroughly. Stir in milk.
Mix together flour, baking powder, and salt. Stir into wet ingredients.
Spread 1/2 the batter into a greased and floured 13x9" pan. Sprinkle with 1/2 the streusel mix. Add remaining batter and sprinkle remaining streusel mix on top.
Bake at 375 for 25-35 minuts. Cut in 3" pieces.
Serve Warm.
Streusel Directions:
Mix all dry ingredients together thoroughly.
Add melted butter and stir with a fork until mixed well.
Baked Oatmeal

Baked oatmeal is a great way to get even the "I don't like oatmeal" bunch to eat their oats. Serve as is, or pour milk over the top.
Ingredients:
1/2 cup oil
1/2 cup sugar
2 eggs
4 tsp. baking powder
2/3 tsp. salt
1 cup milk
1 cup raisins
3 cups oats
1/4 cup sunflower seeds (optional)
Directions:
Mix together oil, sugar and eggs.
Stir in the remaining ingredients in the order given, mixing well.
Spread into a greased, 9x9" baking dish.
Bake at 350 degrees for 30 minutes.
Eat as is, or top with cream or milk.
Esther's Omelet Souffle
We were served this delicious breakfast dish while visiting friends in Tennessee. For a quick, hearty breakfast, assemble the night before and refrigerate.
Ingredients:
12 beaten eggs
1 tsp. salt
1 tsp. pepper
1 tsp. dry mustard
3 cups milk
1 1/2 lbs. ham or cooked sausage
6 slices of bread, cubed
1 cup shredded cheese
1 cup grated cheese
Directions:
Mix together eggs, salt, pepper, mustard and milk.
Stir in meat, bread and shredded cheese.
Pour into a greased, 13x9" baking dish and place in refrigerator overnight.
Bake at 350 degrees for 30 minutes, then cut into squares and return to oven for an additional 15 minutes.
Sprinkle grated cheese over top. Can be reheated.
Makes 12 servings.
Hint: For something different, substitute frozen mixed vegetables (thawed) for the meat.
Gourmet Cinnamon Rolls

You've seen them in the gourmet bakeries; now you can make them yourself at home. Make a double batch and freeze some for another day.
Ingredients:
4 to 4-1/3 cups flour
1 tbs. yeast
1 cup milk
1/3 cup sugar
1/3 cup margarine
1/2 tsp. salt
2 eggs
3 tbs. butter, melted
1/2 cup sugar
2 tsp. cinnamon
Streusel Mix Ingredients:
1 cup powdered sugar
1/4 tsp. vanilla
milk
Directions:
Pre-heat oven to 150 degrees F.
In large mixing bowl combine the yeast and 1 1/2 cups of the flour. Set aside.
In saucepan heat milk, sugar, margarine and salt just till warm (120 to 130 degrees F.) and margarine almost melts. Add to the flour mixture, then add eggs. Beat with an electric mixer on low to medium speed for 30 seconds, scraping sides of bowl; then beat on high for about 3 minutes, adding as much of the remaining flour as you can.
Turn out onto lightly floured surface and knead in enough of the remaining flour to make a moderately soft dought that is smooth and elastic (about 3 to 5 minutes). Shape into a ball. Place in a greased bowl and turn once. Cover and place into oven, and turn oven OFF. Let rise for about 20 minutes or until doubled.
Punch dough down. Turn out onto lightly floured surface and divide dough in half. Cover and let rest for 10 minutes.
Pre-heat oven to 375 degrees F.
Roll each half of the dough into a 12x8" rectangle. Brush with melted margarine. In small bowl, stir together sugar and cinnamon. Sprinkle on top of the dough. (You can also add raisins if you like.)
Starting from one long side, roll up jelly-roll style. Pinch seams to seal.
Spray two 9" cake pans with PAM.
Cut each roll into 10 to 12 pieces, and place into prepared pans.
Cover and let rise about 30 minutes, (Or cover with oiled waxed paper and refrigerate for 2 - 24 hours. If chilled, let stand at room temperature for about 20 minutes before baking.)
Bake for 20 to 25 minutes. Let cool slightly while mixing icing. Drizzle icing over rolls.
