Blackeyed Pea Dip
Southern tradition says to eat black-eyed peas on New Year's Day. This warm, delicious dip is a wonderful way to enjoy them anytime of year.
Ingredients:
2 stalks celery, chopped
1 tsp. black pepper
3/4 cup ketchup
4 chicken boullion cubes
1/4 tsp. nutmeg
1 tsp. minced garlic
1 large purple onion
2 tbs. Tabasco
1 tbs. salt
1/4 tsp. cinnamon
1/4 cup sugar
3 cans black-eyed peas with jalapenos
1 can tomatoes, pureed
1/2 cup bacon drippings
6 pieces bacon, crumbled
Directions:
Bring first 11 ingredients to a slow simmer.
Add black-eyed peas and tomatoes and cook for 30 minutes.
Blend bacon drippings with 1 tablespoon of flour and add to mixture along with the crumbled bacon.
Serve with Frito's corn chips.
Raspberry Chipotle Cheeseball

My friend, Deb, brought this cheeseball to my son's graduation reception. It's not nearly as complicated to make as the recipe looks, and it is SOoooo good!
Ingredients:
First Layer Ingredients:
4 oz. sharp cheddar cheese, grated
4 oz. cream cheese, softened
1 green onion, finely chopped
1 TBS. finely chopped bell pepper
2 TBS. finely chopped pecans
Second Layer Ingredients:
8 oz. cream cheese, softened
1/4 Cup raspberry chipotle sauce
Third Layer Ingredients:
4 oz. cream cheese, softened
4 oz. Colby cheese, grated
1/2 Cup crushed pineapple
1/2 tsp. dry ranch dressing mix
Ribbon:
1/3 Cup raspberry chipotle sauce, spread over 1st layer
Directions:
Line a 1 quart casserole or bowl with plastic wrap. Be sure the ends extend beyond the sides of the dish!
Mix all first layer ingredients together thoroughly and press onto the bottom of the plastic lined dish.
Spread ribbon over first layer ingredients.
Blend second layer ingredients thoroughly and spread over ribbon.
Spread ribbon over second layer ingredients.
Blend third layer ingredients thoroughly and spread over ribbon.
Fold the loose ends of the plastic wrap up over the third layer, making sure it is covered completely. Refrigerate overnight.
To serve, invert bowl onto serving plate. Remove bowl and plastic wrap.
Serve with Ritz crackers.
Hint: This cheeseball "weeps", so don't put the crackers on the sam eplate with the cheeseball... unless, of course, you like soggy crackers!
Pickled Shrimp
Ever since I was a little girl, I remember my grandmother serving this unusual appetizer at family get-togethers. Note: This stuff is highly addictive... Consider yourself warned!
Ingredients:
Pickled Shrimp:
2 1/2 lbs. shrimp in shell
1/2 cup celery tops, chopped
1/4 cup mixed pickling spices
3 1/2 tsp. salt
2 cups sliced onion
7 or 8 bay leaves
Pickling marinade
Pickling Marinade:
1 1/4 cups salad oil
3/4 cup white vinegar
3 tbs. capers with juice
2 1/2 tsp. celery seed
1 1/2 tsp. salt
dash of Tabasco, or other hot sauce
Directions:
Cover shrimp with boiling water, add celery, spices, and salt. Cover and simmer for 5 minutes. Drain and cool. Peel and devein shrimp. In a shallow baking dish, alternate layers of shrimp and onion. Add bay leaves. Pour pickling marinade over all. Cover and chill for 24 hours.
Hint: To use frozen, pre-cooked shrimp: Thaw shrimp. Combine all spices and bring to a boil. Remove from burner and stir in shrimp. Allow to sit for 15 minutes to absorb flavors, then proceed to layering with onions.
Seven Layer Dip

Ingredients:
Canned refried beans, heated
Avacado, creamed with lemon juice
Black olives, chopped
Sour cream
Tomatoes, chopped
Onions, chopped
Cheddar or colby-jack cheese, grated
Directions:
Layer all ingredients in the order given in a baking dish. Chill.
Serve with corn or tortilla chips.

Ingredients:
Cream cheese, softened
Canned chili (no beans)
Colby-jack cheese, grated
Directions:
Heat chili thoroughly.
Layer all ingredients in a baking dish in the order given. Heat through in the microwave.
Serve warm with tortilla chips.
Shrimp Cocktail Dip
Ingredients:
Cream cheese, softened
Frozen pre-cooked shrimp, thawed
Cocktail Sauce
Directions:
Layer all ingredients in a baking dish in the order given. Chill.
Serve with Ritz crackers.
Hint: Get the picture? Almost anything that goes well together can be layered over cream cheese and turned into a delicious dip!
