Jambalaya
Shrimp, ham, and rice (and lots of hot sauce) combine for a tongue-tingling meal.
Even if you're not into "hot", it's still delicious!
Ingredients:
2 cups cooked ham, cubed
1 tbs. garlic powder
3 tbs. butter
4 cups chicken broth
2 - 16 oz. cans diced tomatoes
1 large onion, chopped
1 large red or yellow bell pepper
1/4 cup Worcestershire sauce
Hot sauce or cayenne (to taste)
1 1/2 - 2 pounds cooked shrimp
3 cups uncooked rice
Directions:
Chop ham, bell pepper and onion.
Saute ham with the garlic powder in butter until lightly browned.
Add remaining ingredients (except shrimp and rice) and bring to a boil.
Add shrimp and rice.
Turn down heat and simmer covered for 20 minutes, or until rice is done.
