Aunt Tina's Coffeecake
My sister-in-law, Tina, made this delicious,
cinnamon coffeecake for us.
It's been a family favorite ever since. Perfect with a cup of coffee.
Coffeecake Ingredients:
1 1/2 cups sugar
1/2 cup soft shortening
2 eggs
1 cup milk
3 cups flour
4 tsp. baking powder
1 tsp. salt
Streusel Ingredients:
1 1/2 cups brown sugar
6 tbs. flour
6 tsp. cinnamon
6 tbs. butter, melted
1 1/2 cups chopped nuts (optional)
Directions:
Blend sugar, shortening and eggs together thoroughly. Stir in milk.
Mix together flour, baking powder, and salt. Stir into wet ingredients.
Spread 1/2 the batter into a greased and floured 13x9" pan. Sprinkle with 1/2 the streusel mix. Add remaining batter and sprinkle remaining streusel mix on top.
Bake at 375 for 25-35 minuts. Cut in 3" pieces.
Serve Warm.
Streusel Directions:
Mix all dry ingredients together thoroughly.
Add melted butter and stir with a fork until mixed well.
